Lemon Parmesan Gremolata Smashed Potatoes

These are seriously my favorite potatoes of all time.  The flavors are bright and clean, and the potatoes are crispy on the outside, and fluffy on the inside.  They’re super easy to make in any quantity, but the flavors are really gourmet and the results are good enough for that special date night or for a dinner party.  Use them as a side dish for beef, chicken, pork, or even on their own.  Feel free to use as much or as little parmesan cheese, parsley, and garlic as you want.  It’s completely up to you and your tastes…but the combination is dynamite!

The parsley came straight from the garden and lemon picked off the tree in the backyard.

Total Time: 45 minutes

Ingredients (everything is to taste)

  • 2lbs fingerling potatoes
  • water for boiling
  • 4 tbs olive oil (to drizzle)
  • 1/4 cup parmesan cheese
  • parsley (1/8 cup when chopped)
  • 5 cloves garlic (feel free to use less)
  • lemon zest
  • sea salt

Directions

  1. Preheat oven to 400* F
  2. Boil potatoes till fork tender
  3. While potatoes are boiling,  finely chop garlic and parsley
  4. Grate zest of one lemon into garlic and parsley mixture
  5. Add cheese to mixture and set aside.
  6. Drain and pat potatoes dry
  7. Drizzle cookie pan with olive oil and put potatoes on top
  8. Smash each potato with the bottom of a glass until the skin has broken
  9. Drizzle smashed potatoes with olive oil and sea salt
  10. Bake in the oven for 30 minutes till crispy, flip potatoes half way through
  11. Immediately toss potatoes with gremolata
  12. Enjoy!
